Anyway I came up with this hanging system to allow me to do both sides. Now I have to stay away and let them bake for 2 days. Kind of like a smoking meat I guess.

This week I learned what a Poubelle is (aka Ciderkin). Poubelle is French for "trashcan". It's basically a cider made from the leftovers after brewing a cider. It's supposed to be a low-alcohol session drink. This particular one was ~1.5 abv.

It was worth trying out, but I found it very similar to a wine cooler. They make a 3% version, maybe that one is better. I also know there are similar procedures for wine and beer that might be worth looking into.
