14.7.2023 07:26@Cedric the poll has been sabotaged. Only 2 people voted & one of them ticked every box.I’d like to get a handle on why #gasOvens are almost non-existent in #Europe, and why the few existing ones are so lousy & unpopular. This is my take on the pros & cons (tell me if I’m wrong):
*Functional differences between gas & #electricOvens*
Electric:
- more even heat distribution
- more accurate thermometer & thermostat/thermistors, in part due to close relationship of temp to electrical current
- less temp fluctuation
- dry air thus baking requires adding steam, but favorable to crispy crusts
- slower to preheat, slower to cool
- better to run at elevation
Gas:
- (non-convection) hot & cold spots thus requiring rotation of some foods like bread & brings a burn risk
- inaccurate temp so a separate thermostat is often relied on (European gas ovens are often not even equipped with a thermostat, just temp levels 0—9 like stoves)
- temp fluctuation & instability
- humid air (good for baking cakes & non-crispy things)
- faster preheat, faster to cool
- harder to run at elevation
- (EU only?) when you open the #oven door, the oven shuts off
*Efficiency & econony differences*
Electric:
- more efficient from wall to food
Gas:
- ? more efficient from fuel supplier (via distribution network) to food (heavily debated)
- ? cheaper to fuel
There are pros and cons to both. So as expected, in the US there is a balance. The market gives good options for both kinds of #ovens. Operational cost & efficiency is perhaps the biggest strength of gas ovens.
Why is it so one-sided in Europe? Apparently Europeans have all simultaneously favored electric.
