3 shallots (or onions)
10 Fresno chilis
2 tsp kosher salt
3 bay leaves
3 TBSP smoked paprika (yeah, it's a lot)
shitload of dried thyme and oregano
4 tbsp cooked tomato paste
1 lemon's worth of juice
1.5 tbsp white wine vinegar
1.5 c olive oil

I also tossed in an Ancho and a few thai peppers for shits and giggles.

It's not super hot, oddly
