Food trucks in the Four Corners region of the USA have a distinctive flavor. And it's good.

A food truck at Highway 64 Auto Salvage in Kirtland, New Mexico, just before Christmas. I had stopped in at the salvage yard looking for a part for my Subaru. The employees were feasting on pozole that the food truck had given them for a holiday meal. They were kind enough to share with random customers like me and it was freakin' delicious.
